As we move toward spring in Colorado, our snow days start to increase (March and April are the snowiest months in our great state.) Soup is the perfect meal for a cold snowy day, couple that with it being Friday and Lent (no meat for us Catholics on Fridays).

It has become a tradition in my house that every Christmas morning while we are opening Christmas presents and stockings that we enjoy homemade pumpkin bread and coffee with the girls enjoying a cold glass of milk.

A Day After Thanksgiving Soup Recipe in Honor of My Late Mother-In-Law Caroline Putnam.

Over the years my family has developed a tradition of having pizza on Friday nights. In the beginning we would sometimes order the pizza but as time progressed, we started making our own pizza and now we hardly ever order out.

The recipe is wonderfully simple but can be tweaked as needed. For my rendition, I decided to through in some cut veggies on the bottom which included onions, butternut squash, a parsnip and mushrooms, then I placed the chicken on top of the veggies.
