Posh Gardens Salsa

Salsa always sounded so complex to me until this week! With beef being so ridiculously expensive these days our “Taco Tuesdays” have been mostly fish tacos. I love me a good mango salsa with my fish tacos and this Tuesday was no different. Except… that is time I decided to make homemade salsa using ingredients from Posh Gardens, which included Andy’s jalapeno and Hungarian banana peppers and my White currant and Black strawberry tomatoes. It was a total experiment and proved to be AMAZING! So without further fan fair I give you Posh Gardens’ Salsa by yours truly!

Ingredients

1 to 2 jalapeno peppers

1 to 2 yellow banana peppers (I used Hungarian as that is what Andy grew this year)

1 small red onion

1 mango

1 to 2 cups of dice tomatoes (I used a combination of White current and black strawberry tomatoes as that was what was available in my garden)

Handful of diced fresh cilantro

Directions

Wearing some kind of rubber or latex gloves cut the peppers in half and remove the seeds. With gloves still on, finally dice the peppers. Wearing the gloves will keep the juices off your fingers and help to avoid accidently rubbing your eyes and the burn that comes from the peppers! Next dice the onions, tomatoes mango and cilantro. Mix everything together and let it rest, this will give the different ingredients to join forces and create a flavorful salsa!

While I used the salsa on the fish tacos it also makes for a great nacho chip dip adding a refreshing crunch to each bite! I hope you enjoy this original recipe from Posh Gardens.
