Jalapeno Honey Butter

This is an original recipe inspired by an episode I saw on Getting Lost with Erin French. A little back story here… I’ve been getting caught up on watching The Lost Kitchen series on HBO Max, one of my favorite cooking shows as Erin French locally sources her food for her restaurant The Lost Kitchen located in Freedom, ME. The series is inspirational because she highlights the value of growing your own produce and supporting your local farmers/gardeners of which I am one, granted in CO not ME but still… what she offers is the ultimate farm to table experience!  She has a new series out called Getting Lost with Erin French where her and her husband are traveling the US in their airstream in search of inspiration for the next season at her restaurant. Thus far they have traveled to LA, TX, AZ and CA. I’m thinking it was in AZ where I saw her mix up a butter concoction using grilled jalapeno peppers, butter and honey.

My husband, Andy loves to grow a variety of peppers, and I’ve been trying to figure out what to cook with them. So, when I saw this, I thought hey maybe I can recreate something similar using Andy’s jalapeno peppers! It was a total experiment with no set measurements, but it turned out amazing! So, without further ado, I give you my rendition of Erin French’s Jalapeno Honey Butter!

Ingredients

1 fresh Jalapeno pepper

1 stick of unsalted butter (my go to is Irish butter… it is a little more expensive, but the texture and consistency is perfect when brought to room temperature – especially for this recipe)

Fresh Honey

Directions

Set the stick of butter out and bring it up to room temperature. Grill pepper on grill until it is slightly charred. Remove pepper from grill and let rest 5-7 minutes. Destem and cut pepper in half and remove seeds. Gently scrap charred skin off exterior and finely dice the pepper. Place room temperature butter in a small mixing bowl and add diced peppers. Using a fork mix the two ingredients until the peppers are evenly dispersed in the butter. Next drizzle honey into the butter and continue mixing. The addition of honey is to taste but I found that only a little was needed to create a beautiful blend of sweet and spicy! Serve over fresh baked bread.
