Cucumber Gin Gimlet

As Andy continues to recover from his stroke, he explores different mocktail recipes that can incorporate what we grow in the garden. The Cucumber Gin Gimlet discovery came about from this exploration. Andy uses non-alcohol Gin, and he loved it. I decided if I was going to write about the drink, I better give it a try myself, only I use real gin! It did not disappoint and so without further fan fair I give you the Cucumber Gin Gimlet.

 

Ingredients

2 ounces Gin (my favorite gin is from Dingle Ireland)

4 slices cucumber (I’m growing lemon cucumber in the garden, so I used that variety… AMAZIMING!)

1 tablespoon fresh Rosemary (also from the garden)

½ lime

½ - 1 ounce simple syrup

Garnish (options)

1 Sprig fresh Rosemary

1 strip cucumber (cut a round and slit it so that it could sit on the side of the glass)

1 slice Lime

Directions

Add cucumber slices, fresh Rosemary, lime juice and simple syrup to a cocktail shaker and muddle well.

Next add ice and gin and shake gentle for 30 seconds. If you are garnishing with the strips of cucumber, use a vegetable peeler to make long strips of cucumber and wrap them around the inside of the glass and fill with ice. Pour in the gin mixture from the shaker and enjoy! We found that it works best with a short bar glass verses the taller G&T glasses.

So good and so refreshing and even better when you use ingredients from your own garden!
