Garlic Scapes on the Grill

For whatever reason I love growing garlic. I think it is because garlic is a staple in many if not most recipes. Last year I hosted a garlic tasting with my friends to determine of the garlic I grew which was the most flavorful. The winners were Spanish Roja, Music and Elephant garlic. These three varieties are what I planted in the garden last fall using bulbs I had grown the year before. I saved the best and the biggest garlic heads to plant in our 2026 veggie patch. The garlic survived the winter, not surprising given how warm it was, and growing strong this spring! the first gift to arrive from this savory crop are Garlic scapes! I discovered this tasty morsel at the Palisade farmers market in 2025. This is my second season of harvesting the scapes and they are even better this year, both bigger and even more flavorful!

Last year I made Garlic Scape rings, a garlic version of onion rings. Supper easy to make as all you really did was bread them and fry them up like you would an onion ring. This year I put Andy on the taste of researching and finding new recipes for Garlic scapes. I thought making the Garlic Scape rings was easy, Grilled Garlic Scapes are even easier! And… they are healthier as there is no frying involved!

Ingredients

A bunch of garlic scapes (I harvested 12)

Olive oil

Coarse salt

Pepper

Lemon wedges

Directions

Cut the tough stringy tips off the top of the scapes. Next toss the scapes in olive oil, salt and pepper. Once they are well coated, grill them over medium-high heat for about 5 – 6 minutes, turning occasionally, until they get nice char marks and become tender. Remove from grill and arrange on a plate or platter. Squeeze fresh lemon juice over the top before serving.
